2 lb sliced beef liver
1 medium onion chopped
1 clove garlic minced or mashed
1 tbsp. flour
1 can (8 oz) tomato sauce
1/2 c ketchup
1 c water
1 tsp minced parsley
1 tsp oregano
1/2 c chopped celery
1 tsp salt
1/2 c chopped green pepper
1/2 tsp pepper
1 can (4 oz) mushrooms (stems and pieces)
4 oz pitted olives
2 tbsp olive oil or salad oil

Directions:
Directions:
Place liver in greased baking dish or pan 9X13. Combine onion, garlic, flour, ketchup, parsley, celery, green pepper, mushrooms, olives, olive oil, tomato sauce, water and spices. Mix until well blended and pour over liver. Bake uncovered in 350ºF oven for 30 to 40 min or until tender.
