Equal volume eggs, milk, flour
Avocado oil (or vegetable oil)

2 large eggs makes 6 muffins

1. Beat eggs, add flour and milk and whisk until smooth. Ideally this is done a few hours early and left at room temp.

2. Preheat oven to 425. Put dollop of oil in each bucket of a muffin tin. Put pan into oven until oil is hot (about 5 min).

3. Re-whisk the batter if it had been sitting. Pull pan from oven and quickly pour batter into the oil dollop (fill ⅓ of muffin bucket) and put in oven.

4. Set timer for 20 min and DO NOT PEAK in oven. Bake until crispy but not burned. May be up to 27 min. Use oven light to inspect.

5. Douse with gravy as desired.
