1/3 cup Hoisin Sauce
1/3 cup Soy Sauce - reduced sodium
2 tablespoons maple syrup
2 tablespoons Sriracha Chili Sauce
1 tablespoon Rice Vinegar
2 teaspoons Sesame Oil (or olive oil)
2 Garlic Cloves - minced
1/2 teaspoon Ginger Root - grated
4 Chicken Thighs
1 Sweet Potato - cut up
2 tablespoons Olive Oil
4 cups Cauliflower or Broccoli - cut up
1 Sweet Red Pepper - cut up

Directions:
Directions:
Preheat oven to 400ºF

Line baking sheet with foil and spray with Pam.

Mix first 8 ingredients together and set aside.

Sprinkle chicken with salt and pepper. Place on baking sheet along with sweet potatoes. Drizzle with olive oil and 1/3 of Hoisin Mixture. Toss to coat. Bake for 20 minutes. Stir.

Add remaining vegetables to pan. Drizzle with olive oil and 1/3 of Hoisin Mixture. Bake for 20 minutes.

Drizzle with remaining sauce and cook 5 minutes.
