1 Large head cauliflower (cut into chunks, about 8 cups)
1 Medium yellow onion (sliced)
minced garlic
3 Cups chicken broth
3 Tablespoons olive oil
sea salt and black pepper to taste
1/4 teaspoon cayenne pepper
1 Tablespoon dried thyme leaves

Directions:
Directions:
Chop cauliflower and onions.
Drizzle on 2 Tablespoons of olive oil and season with salt and pepper. Toss to evenly coat.
Fry in pan, turning occasionally, until tender.
Add the garlic, thyme, cayenne pepper and chicken broth to the pan. Simmer for 10 minutes.
Gently ladle soup into a blender and puree until smooth.
