2 pounds chicken breasts cut in cubes
1 tsp salt and pepper, or to taste
1 ˝ TBSP vegetable oil
˝ onion, thinly sliced
2 TBSP curry powder
2 cloves of garlic, crushed
1 can (14 oz) coconut milk
1 can (14 oz) stewed or diced tomatoes
1 8 oz can tomato sauce
3 TBSP sugar

Can be done in a crock-pot.
Put in ingredients (minus the oil.. the oil is for if you brown the chicken) and let it cooking low while you are at work... I can’t remember if you have to cook the chicken first... we always use leftover grilled chicken if I’m using the crock pot. Let me know what works best and I will update recipe.

Best way to make it:
1. Brown the chicken (or grill) with a little salt and pepper in the oil in a Dutch oven.
2. Remove the chicken and add a little more oil to pan.
3. Sauté the onion for 2-3 minutes, then add the curry powder. This will bring out the curry flavors. Sauté for 3-4 more minutes. Do not brown the onions.
4. Put the chicken back in the pot.
5. Add the rest of the ingredients to the pan, cover and simmer 30-40 minutes. Stir occasionally.
6. Cook the rice.

Very simple recipe and it is always the first to disappear at the speech/debate tournaments even though I triple the recipe.
