3 cups frozen hash browns
3/4 cup shredded cheese
1 cup diced ham, breakfast sausage or crumbled bacon
4 beaten eggs
1 (12 oz) can evaporated milk
Salt and pepper to taste

Directions:
Directions:
Grease a 2 quart square baking dish. Arrange potatoes evenly in the bottom of the dish. Sprinkle with cheese and meat (or make it vegetarian).
In a medium mixing bowl, combine eggs, milk, salt and pepper. Pour egg mix over potatoes. (May be covered and placed in refrigerator over night). Bake, uncovered at 360 degrees for 45-50 minutes

I love changing this recipe up by adding chopped veggies and different kind of cheeses. You can make this into individual servings by using a large muffin or a mini loaf pan, just decrease your cooking time.
