Coconut Bread Recipe

3 c flour
2 t baking powder
1/2 t baking soda
1/2 t salt
2 c sugar
1 c oil
4 eggs, lightly beaten
2 t coconut extract
1 c buttermilk
1 c shredded coconut
1 c chopped walnuts

Combine flour, baking powder, baking soda and salt. Set aside. Mix sugar, oil, eggs and coconut extract. Add dry ingredients alternately with buttermilk. Stir until just moistened. Fold in coconut and nuts.

Pour into two greased and floured bread pans. Bake 325 for 1 hour or until done.

Cool 10 minutes in pan before removing to wire rack to cool completely.
