Cake-
4 oz unsweetened chocolate
1c Greek yogurt
1/2c almond milk
1c erythritol plus 1/4c stevia in the raw
2 sticks butter room temperature
5 eggs at room temperature
1-1/2c almond flour
1c coconut flour
1tsp baking soda
1tsp baking powder
1Tbsp vanilla
1/2 tsp salt

Icing-
1 stick butter
1c whipping cream
1/2c erythritol plus 2 Tbsp stevia in the raw
3 eggs
1Tbsp vanilla
pinch salt
2c unsweetened shredded coconut
1-1/2c chopped pecans

Cake-
Preheat oven 350. Lightly butter a 9x13 pan and line with parchment.
Chocolate, yogurt, almond milk in a saucepan, heat over medium, stirring occasionally, until chocolate melts.
Cream butter and sweeteners. Beat, adding eggs 1x1. Add flour slowly, baking powder, baking soda, salt. Add in chocolate mix slowly. Spread evenly in prepared 9x13. Bake about 30 minutes, then check about every 5 minutes until done. When done, remove from oven and allow to cool.

Icing-
Melt butter in a saucepan over low heat. If desired, allow to brown gently. Add cream, simmer for about 10 minutes stirring frequently. Whisk eggs in another bowl. Temper eggs with a small amount of the butter/cream mix, then mix eggs into cream. Simmer slowly until eggs thicken the mix, then add pecans, coconut. Remove from heat and add vanilla. Spread over cake.
