Hashbrown Casserole Recipe

32 oz frozen shredded hashbrowns defrosted
½ c melted butter
10 ¼ oz can of cream of chicken soup (or cream of cheddar)
1 pint of sour cream
½ c onion finely chopped
2 c grated colby cheese
¼ tsp pepper

Preheat oven to 350º. Combine all ingredients in a large bowl reserving 1/2 cup of cheese for topping. Place in a greased 9 × 13 casserole dish and top with reserved cheese. Bake for 45-55 minutes or until hot and bubbly.

I like to top it with cheese to keep it close to the Cracker Barrel version but if you prefer a nice crunchy topping on your hashbrown casserole, this is also great with cornflakes. Gently crush 2 cups of cornflakes and toss with 1/4 cup of melted butter, sprinkle over the casserole before baking.
This easy cheesy hashbrown casserole can easily be frozen. I usually prepare as directed and freeze any leftovers in individual servings making them the perfect lunch or quick dinner.

When Abbie graduated High School instead of buying her a car or paying for her education, I chose to do an experience with her. She had the option to use the family car with option to purchase at a very reasonable price, and she had very good grades with scholarships. So when she graduated, I took her on a 4 day trip to Maui, Hawaii.
I got a lot of flack from people when I chose to go this route, but my mindset changed when I was teaching at the college. Those that paid their own way actually came to class and did well, and those that didn't earn their own way or were just there because they were supposed to be, partied and wasted a year or two. Material things like cars come and go and they also don't come for free. I have had to work for everything that I have gotten. That is part of the problem with the world today is they have too much given to them and they don't know how to work. When it comes to spending time with family, quality time, a person should never regret it and can never get time back to do it over. So if I had my choice to to it again, I would make the same exact decision and spend quality time with my daughter (even though it was only a few days) then purchasing her a car or paying for her education.
