4 medium potatoes, pealed and cubed
¾ c. chopped onion
1 small carrot, chopped
¼ c. celery, chopped
1½ c. chicken broth
3 tbsp. butter
3 tbsp. flour
2½ c. milk
1 tbsp. parsley
¾ tsp. salt
½ tsp. pepper
1 c. shredded Swiss cheese

Directions:
Directions:
Combine potatoes, onion, carrot, celery, and broth. Simmer 15 minutes or until vegetables are tender; lightly mash.
Melt butter in saucepan. Stir in flour until smooth. Gradually stir in milk. Bring to a boil. Cook and stir about 2 minutes or until thickened. Stir into potato mixtures. Cook and stir until thickened and bubbly. Add parsley, salt and pepper. Remove from heat. Stir in cheese.
