Meringues

3 egg whites
1 tsp cornstarch
3/4 c / 150g sugar
1/2 tsp vanilla

Beat egg whites to soft peaks. Combine cornstarch and sugar. Add to egg whites 2 TB at a time. When the whites are stiff and glossy (all sugar has been added), slowly add in the vanilla. Bake in 4-inch "cookies" on parchment: 1 hour at 250º, then leave in the oven to dry out.
 

Berry Sauce

1 1/2 c cranberries
1 1/2 c raspberries
1/2 c sugar
1/2 c water

Directions:
Directions:
Combine all ingredients in a saucepan. Boil over medium heat until cranberries pop and it looks saucy (~10-15 minutes). Cool completely.
 

Whipped Cream

1 c whipping cream
2 TB sugar
1/2 tsp vanilla

Beat the cream to soft peaks, adding sugar and vanilla at end.

To serve, crumble a meringue into a serving bowl. Top with 3 spoonfuls of sauce and 1 spoonful of cream.
