2 c uncooked macaroni
6 TB flour
1/4 tsp salt
2 c cold milk
1 c grated cheese, plus more for topping
1/2 c diced ham

Directions:
Directions:
Put pasta in pot and barely cover with water. Add 2 TB salt. Cover and bring to boil. Turn heat down and simmer ~5-7 minutes until al dente (taste to check it's done). (If you are going to freeze it, you definitely want the noodles al dente because they soften up as they bake again later.)

Cheese sauce: stir flour and salt into milk. Cook over medium heat until thick. Stir in cheese.

Add ham and macaroni.

Pour into greased pan. Top with a generous amount of grated cheeses. Bake covered in a 9 x 13" pan for 15-30 minutes at 350º, then uncover and broil for 10 minutes.

- Edam and Gorgonzola
- Cheddar, Monterey Jack, and Parmesan
- Cheddar and Aged Provolone
- Asiago, Parmesan, and Aged Provolone
- one melty cheese, one strong/salty cheese, and one mild creamy cheese make the best combos

To add a head of cauliflower to a double recipe of mac and cheese, roughly chop it and steam it. Pulse 3x in the food processor until it looks like couscous. Stir into cheese sauce before adding noodles. (I don't cut off the nice leaves. But they do show up green if you are trying to sneak in extra veggies, so know your audience.)
