however much pork you want, slivered
cornstarch
salt

sugar
1 TB ginger, in fine strips
sesame oil
bean sprouts
ho fan (wide white river noodles)
2 tsp dark soy sauce
2 tsp sweet soy sauce (aka pan fry soy sauce)
1/2 TB sugar
1 tsp water

Bring ho fan to room temperature.

Put your pork in a pie plate and sprinkle with a dusting of cornstarch and pinches of salt, pepper, and sugar. Toss and rest 10 minutes. Heat sesame oil in a non-stick pan, saute ginger 1 minute. Add the meat and do not stir. When brown, flip, turn heat down to medium and finish. Remove pan from heat.

In a second non-stick pan, heat sesame oil over medium high. Add washed bean sprouts and gently stir. Flip the whole mass at once. Combine 2 tsp salt, 2 tsp sugar, and 3 TB water; sprinkle over bean sprouts. When they turn translucent, set aside in a strainer.

In the second non-stick pan, heat sesame oil Lay separated ho fan in pan. When brown, gently lift and rotate over to other side. Combine soy sauces, sugar, and water in a bowl; sprinkle over ho fan. Add meat and sprouts, toss gently to combine and serve hot.
