2 onions, sliced
2 lb beef sliced (2" by 4"
4-6 potatoes, cubed
1 pkg yam noodles
600 mL water + 1 packet hondashi (fish powder)
3 TB soy sauce
3 1/2 TB mirin & sake

Directions:
Directions:
Caramelize onion over medium heat in a large pot. Turn up the heat and add beef. Cook through.

Add potatoes and yam noodles. Add fish broth to come halfway up the mixture. Add 2 TB each soy sauce and mirin. Cover partially and simmer until potatoes and noodles are tender. Adjust the seasonings by adding more soy, mirin, and sake.
