800 g fresh spinach fettucini (or 450 g dried)
2 tsp butter
3 c sliced mushrooms
1 1/2 c half&half or sour cream
1 1/2 c whipping cream
400 g smoked salmon, chopped
4 TB pesto
1/3 c freshly grated Parmesan

Directions:
Directions:
Cook and drain pasta.

Saute mushrooms in melted butter, 2 minutes. Add creams and simmer until it starts to thicken (~4-6 minutes). Stir in salmon and pesto. Season with freshly ground pepper. Add pasta and cook to coat (~1-2 minutes). Sprinkle with Parmesan and serve hot.
