1 ⅓ c risotto rice
zest and juice of 1 lemon
⅔ tub refrigerated basil pesto
2 tsp minced garlic
3 T butter
1 c bread crumbs
handful parmesan
¾ oz. package fresh basil
2 roma tomatoes, seeded and diced
1 tiny bottle (187 ml) white wine
4 c warm chicken stock
1 lb ground turkey
1 egg
1 T Poultry seasoning
salt

Directions:
Directions:
Roughly chop the basil. Combine all but a handful of basil with the turkey, egg, breadcrumbs, poultry seasoning, and ½ tsp salt. Form into handful sized balls, and press into patties. Cook in a pan with 2 T olive oil once risotto is half done, turning once. For the risotto: Melt butter, add rice and cook for 3-5 minutes. Add garlic, cook for 1 minute more. Add wine and cook until absorbed, stirring constantly. Once wine is absorbed, add the stock 1 ladleful at a time, adding the lemon zest and juice after the first ladle. Stir constantly, waiting until each dose of stock is absorbed before adding more. Add pesto with the last of the stock. Remove from heat. Add parmesan, tomatoes, and the rest of the basil. Serve in bowls, topped with the turkey patties.
