Mini Quiche by Mary Hayes Recipe

1 pkg flaky layer biscuits. (Jumbo)
1 lb sausage browned and drained
2 eggs
1 cup cottage cheese
1/4 cup Parmesan cheese
1/4 cup chives ( finely minced)

Combine browned sausage, eggs, cottage cheese, Parmesan cheese and chives.
Separate each biscuit into 2-3 pieces.
Gently press each piece of biscuit into muffin tins sprayed with cooking spray.
Put filling into each tin.

Bake at 375 for 15-20 minutes. (12-15 minutes for mini ones)

Let cool a few m8nutes before removing from the pan.

If you divide bisquits into 2 pieces - you will get 16 quiches
If you divide bisquits into 3 pieces - you will get 24 quiches. ( by adding a little more cottage cheese and an extra egg).
