40 pieces (approx.)
3 cups sugar
˝ c. light corn syrup
2/3 c. water
2 egg whites
˝ tsp. salt
1 tsp. almond extract
1 cup nuts, chopped, Optional
8-10 Marachino cherries, diced and drained on paper towel for garnishing the candy………..Optional

Boil sugar, syrup and water to hard ball stage: 250 degrees

When syrup is close to temp, beat egg whites with an electric mixer until foamy; add salt and continue beating until whites are stiff (hold a peak without folding).

When syrup is at temp., beat egg whites while SLOWLY pouring a small but steady stream of it into the egg whites, continuing to beat until all syrup has been added.

At this point, I set the bowl into a sink full of cold water and continue to beat the mixture for 15 to 20 min. at high speed. It will set up as it cools. When it looks like it might be stiff enough , try spooning a teaspoon out onto waxed paper on your counter. If it holds it’s shape without flattening, it is ready .

Fold the almond flavoring in at this time, and the chopped nuts if desired. Then swiftly spoon out rounded teaspoons of the candy onto waxed paper, and garnish each piece with a piece of cherry. *It might take two people to spoon it out, as it hardens fast.

Store in a tin with waxed paper beneath and between layers, rather than Tupperware, or it will get sticky.
