Dressing

1/4 c canola oil
1 1/2 TB soy sauce
1 1/2 TB sushi vinegar
1 tsp sesame oil
1 TB sugar
1/4 tsp ginger
1/4 tsp pepper

Whisk dressing together in the serving bowl.
 

Pasta Salad


Ingredients:  
Ingredients:  
340 g penne or spiral pasta
2 chicken breasts
1 head broccoli or 2 zucchini
1/4 c chopped cilantro
1/4 c chopped green onion

Directions:
Directions:
Dust chicken with salt & pepper, then BBQ.

Boil pasta: barely cover pasta with cold water. Add 1 TB salt. Bring to boil and cook 10 minutes.

Steam broccoli (or saute zucchini).

To serving bowl, add pasta, broccoli, chicken and stir well. Top with cilantro and green onion. Serve immediately for a warm salad. Refrigerate overnight (and taste to adjust seasonings) for cold salad.
