Ingredients:  
Ingredients:  
1 c. cubed butternut squash
1/2 red pepper strips
1/2 red onion strips

1 clove garlic, minced
t tsp. curry powder
1/4 tsp. salt

2/3 c. vegetable broth
1/2 c. garbanzo beans, drained & rinsed

1/4 c. fresh cilantro, chopped
2 tsp. fresh lemon juice

1/4 c. plain Greek yogurt

Directions:
Directions:
Lightly brown vegies, 7 min.
Add seasonings
Add beans and broth. Bring to a boil then simmer, covered, til tender - 7 min. Add cilantro & lemon juice.
Serve topped with yogurt.
