Ingredients:  
1 Red Pepper, chopped fine
½ Yellow Onion, diced
7 medium Golden Potatoes, diced
1 can Shoepeg (white corn)
1 can Yellow Corn
2 cups Chicken Broth
½ cup Heavy Cream
1 cup grated Monterrey Jack Cheese
5 slices of Bacon, cooked
Salt & Pepper
2 tbsp Butter
½ tbsp Cornstarch
Splash of Water

Directions:
Directions:
Saute peppers and onions in butter for about 5 minutes; add potatoes, corn, chicken broth, salt/pepper. Cook on high until it starts to boil then turn to low and let simmer until potatoes are cooked through. Add cornstarch/water mixture. Stir to thicken. Add cream and cheese. Stir until the cheese melts. Top with crispy bacon, more cheese, and sour cream (if desired).
