Italian Chicken Soup Recipe

1 box Pasta (short type) - cook by directions
1 whole Chicken, cooked/boiled
1 medium Onion, chopped
2 Green Peppers, diced
2 stalks Celery, diced
2 fresh Jalapeņos, diced
1 tbsp Olive Oil
1 28oz can Diced Tomatoes
2 cups Whipping Cream
⅓ cup Extra Virgin Olive Oil
8 oz Chicken Broth
4 tbsp fresh Oregano, chopped
Salt/Pepper to taste

Cook pasta by directions and toss in EVOO and set aside. Heat small skillet over medium heat, add EVOO and oregano, stir, turn off, and set aside. Saute onion, green peppers, celery, jalapeņos in EVOO. Pour chicken broth in large soup pot, add sauted onion/pepper mix, add shredded chicken and can diced tomatoes in juice. Bring to a boil, reduce to simmer. Add cooked pasta, whipping cream, and olive oil with oregano. Stir to combine. Turn off heat, serve with fresh parmesan sprinkled on top.
