6 T. Olive oil
1 yellow onion chopped
some minced garlic
2 green or red peppers seeded and diced
2 jalapeno peppers seeded and diced
3 T. Chili powder
1 ˝Tsp. cumin
1 tsp. coriander
pinch of cinnamon

6 chicken breasts shredded or cut in cubes
2 cans of tomato puree or chopped tomatoes
2 cups of chicken broth
Maybe a can of beer

Directions:
Directions:
Heat half the oil in large kettle and had onion and garlic saute for 3 minutes. Add pepper and and continue to cook for a few minutes. Than add all the spices and the tomatoes and broth. Cook for several minutes and then add the chicken.
You can also add zucchini or beans.
Cook on low for an hour or so.
