Ingredients:  
1 lb (or large container) button mushrooms
2 to 3 medium potatoes, peeled and cut in ¼ inch slices
3 ribs celery
1 onion, peeled and cut into ¼ inch slices
1 large can chicken stock (I use College Inn low fat/salt)
¼ lb sweet butter (don't waste your time with margarine)
Salt and white pepper
Nutmeg and/or cinnamon

Directions:
Directions:
1. Clean mushrooms and remove caps from stems. Reserve in separate bowls.
2. Melt butter, add caps, sauté and remove caps. Reserve.
3. Add stems and vegetables. Sauté until onions are transparent.
4. Add stock and cook 30 to 40 minutes.
5. Cool a little and purée in blender a little at a time.
6. Return to heat and add caps and seasoning; simmer 10 minutes.
7. Optional: Garnish with parsely.
