2 cups finely diced apples
1 cup sugar
¼ c. vegetable oil
1 egg beaten
1 c. flour
1 tsp cinnamon
1 tsp baking soda
¼ tsp salt
1 tsp vanilla
½ c. chopped walnuts

Sauce:
½ c. sugar
1½ T. corn starch
¼ tsp salt
1¼ c. boiling water
2 T. or more lemon juice'
2 tsp lemon rind

Directions:
Directions:
Peel apples and finely dice them. Pour sugar over the apples stir to mix them and let them stand 1/2 hour.
Add oil and egg; Mix flour, cinnamon, baking soda and salt and stir in. Add vanilla and walnuts. Pour into a well greased and floured 8-in square cake pan. Bake at 350º 45 to 50 minutes or until cake tester comes out clean.

Mix sugar, corn starch and salt together add 1 1/4 c. boiling water and cook on medium heat, Stir all the time and boil 1 minute. Add 2 T. margarine, 2 T or more lemon juice and 2 tsp lemon rind. Serve warm over cake.
Can double this recipe for a 9x13 pan and double sauce recipe.
