8 eggs
4 C. sugar
1 lemon rind - grated
6 tsp cinnamon
2 tsp cloves
1 tsp salt
½ lb. almonds
½ lb. citron
1 t. soda in a little hot water
5 C. flour

Directions:
Directions:
Separate eggs. Beat egg whites stiff, add sugar and then egg yolks one at a time. Beat in sugar, grated lemon rind, cinnamon, cloves,nutmeg and salt. Put almonds and citron through a coarse grinder. Add soda in a little hot water and flour.

I used the grinder on my mixer and alternated running almonds and citron through it. Refrigerate the dough as it handles easier if it is cold. Bake at 375 - 400º for 10 minutes. Bake to a light color.

Mom made these every Christmas. I started making them after Mom was gone. Mine haven't turned out quite like hers but but the flavor seems to be the same. I sometimes would make a half batch.
