1lb sweet Italian sausage, casings removed
1 cup finely chopped onion
2 cloves of garlic, minced
5 cups low-sodium beef broth
1/2 cup of water
1/2 cup of red win
2 cups no-salt-added diced tomatoes
1 cup thinly sliced carrots
1/4 roughly torn basil leaves
1/2 tsp dried oregano
8oz can no-salt-added tomato sauce
1/2 cup thinly sliced zucchini
3 tbsp chopped parsley
8oz tortellini
3/4 cup grated Parmesan cheese

Directions:
Directions:
Brown sausage in a 5-quart heavy pot over medium-high heat.
Transfer sausage to a plate and drain off fat from pot, reserving 1 tbsp drippings in pot.
Saute onion and garlic in drippings over medium-high heat.
Stir in broth, water, wine, tomatoes, carrots, basil, oregano, tomato sauce, and sausage.
Bring to a boil. Reduce heat and simmer, uncovered, for 30 minutes.
Skim fat from soup.
Stir in zucchini and parsley. Simmer uncovered for 10 minutes.
Add tortellini and simmer for 10 minutes more.
Divide soup among bowls and top each with parmesean cheese.
