4 large or 8 small bone-in, skin on chicken thighs or drumsticks.
3 tsp dried oregano, divided
2 tsp paprika, divided
1 tsp salt
1/2 tsp black pepper
8oz baby red/yellow potatoes, halved or quartered
8oz brussel sprouts, halved or quartered
2 tbsp olive oil
3 cloves garlic
1 tsp lemon juice

Directions:
Directions:
Preheat oven to 400º, lightly oil a baking sheet.
Season chicken with 2 tsp of oregano, 1 tsp paprika, salt and pepper. Set aside.
Place potatoes and brussel sprouts in a single layer onto the prepared baking sheet.
Top with chicken in a single layer
Stir in olive oil, garlic, lemon juice, and the remaining oregano and paprika.
Spoon mixture over chicken and vegetables
Place into oven and roast for 35 minutes or until the chicken is cooked through
Broil for 2-3 minutes or until the chicken is caramelized and slightly charred on top.
Serve immediately
