2/3 cup margarine
2.3 cup flour
7 cups milk
4 large baked potatoes, cooled, peeled and sliced (4 cups)
12 bacon stripes, cooked and crumbled
1 1/2 cups shredded cheddar cheese
1 cup sour cream
3/4 teaspoon salt
1 teaspoon pepper
1 medium onion
In a large soup kettle, melt butter, stir in flour.
Heat and stir until smooth.
Gradually add milk, stirring constantly until thickened.
Add the sliced baked potatoes and onion, bring to a boil, stirring constantly.
Reduce heat and simmer 10 minutes.
Add bacon, cheddar cheese, sour cream, salt and pepper.
Stir until cheese is melted.
May garnish with onion, bacon bits or cheese
