1 ½ cups Water
4 cups fresh milled whole wheat flour (I use ½ hard white and ½ hard red)
2 Tbsp. Raw Sugar or Honey Granules
1 ½ Tbsp. Dry Milk
1 Tsp. salt
1 ½ Tbsp. butter
3 Tbsp. Vital Wheat Gluten
2 ½ tsp Rapid rise yeast (use 1 ½ tsp. if using active yeast)

Directions:

In a large bowl, dissolve yeast in warm water. Add the sugar, salt, water, dry milk, butter, vital wheat gluten and 2 cups flour. Beat until smooth. Stir in enough remaining flour, 1/2 cup at a time, to form a soft dough.
2. Turn onto a floured surface; knead until smooth and elastic, 8-10 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1-1/2 hours.
3. Punch dough down. Turn onto a lightly floured surface; shape into a loaf. Place into greased loaf pan. Cover and let rise until doubled, 30-45 minutes.
4. Bake at 375° for 30-35 minutes or until golden brown and bread sounds hollow when tapped. Remove from pans to wire racks to cool.

If using a bread machine, put all ingredients in order listed. You can create a memory setting to use each time to make your homemade wheat bread; I created a "Memory 1" setting that stops baking about 18 minutes early since I don't like my crust real hard and dark.
