1 lb Ground Beef, browned & drained
1 cup Rice (cooked w/butter, salt & pepper)
1 Red Pepper, chopped
1 Yellow Pepper, chopped
¼ Yellow Onion, chopped
1 clove minced Garlic
1 Zucchini, finely chopped
½ can Italian Diced Tomatoes
1 tsp Paprika
½ tsp Garlic Powder
1½ Parsley
¼ Basil
¼ Oregano
Salt & Pepper
2 tbsp Butter
Monterrey Jack Cheese, freshly grated

Directions:
Directions:
Brown the meat with onions, peppers, garlic; drain fat and set aside. Saute zucchini. Add cooked rice and meat/veggie mix in the pan with the zucchini. Add seasonings and cook for a few minutes. Pour half into a baking dish and top with cheese. Add the other layer and finish with more cheese. Bake on 350º for 20 minutes or until bubbly. Serves 4-6.
