2 large Sweet Potatoes, peeled & diced
3 Golden Potatoes, peeled & diced
1 Red Pepper, diced
Chopped, cooked Ham (Smithfield is a good brand)
Cajun seasoning
Salt & Pepper
½ stick Butter
1 fried Egg per person

Directions:
Saute peppers; remove from pan when soft. Cook potatoes in butter until tender. Add back in peppers. Add ham. Cook for a few more. Top with fried eggs. Easy!
