½ cup butter
½ cup ricotta cheese
1 tsp. vanilla
1 cup sugar
1 egg
2 cups sifted all purpose flour
½ tsp. baking powder
½ tsp. salt

Directions:
Directions:
1. Preheat oven to 350º

2. Soften butter

3. Blend ricotta and butter with mixture until creamy

4. Add vanilla and mix well

5. Add sugar gradually, mixing until well blended

6. Add egg and mix well

7. Slowly stir in dry ingredients and mix well

8. Drop from teaspoon onto lightly greased cookie sheet

9. Bake 10 minutes

10. Sprinkle sifted confectioners sugar on top of baked cookies if desired.
