2 chicken breasts
2 tbsp. olive oil
1 tbsp. lime juice
1 garlic clove, finely minced
1/2 tsp. chili powder
1/2 tsp. cumin
1/2 tsp. hot pepper flakes (optional)
1/2 tsp. black pepper
1/2 tsp. salt
Tortillas
1 onion
1 small sweet pepper, of your choice

Topping Options:
Salsa
Sour Cream
Shredded Cheese
Chopped tomatoes

Directions:
Directions:
1. Slice chicken into thin strips
2. In bowl, mix together 1 tbsp. oil, lime juice, garlic, chili powder, cumin, hot pepper flakes, black pepper and salt
3. Add chicken strips and stir to coat, set aside
4. Wash peppers
5. Cut onions and peppers and slice into julienne strips
6. In large non-stick skillet over medium heat, heat remaining tbsp. of olive oil
7. Add onions and peppers stirring for 3-4 min., until softened; transfer to a bowl and set aside
8. Add chicken to skillet, cook, stirring for 5-6 min. or until they are no longer pink
9. Return onions and peppers to skillet; stir for about 1 min.
10. To serve, spoon a portion of chicken mixture down the center of each tortilla, top with your desired toppings, fold bottom or tortilla up over filling, fold the sides in overlapping
