1/2 cup powdered sugar
1 cup butter, softened
2 tsp vanilla

2 cups flour
1 cup ground or finely chopped almonds or pecans
1/4 tsp salt

powdered sugar to roll cookies in

Directions:
Directions:
Preheat oven to 325°.

In large bowl, combine first 3 ingredients, blending well.

Stir in remaining ingredients until dough hold together.

Shape into 1 inch balls and place on greased cookie sheet

Bake for 15-20 minutes or until set but not brown. Immediately remove from cookie sheet.

Cool slightly and roll in powdered sugar.

Cool completely and roll again in powdered sugar.

Another favorite from my trusty Pillsbury Kitchen Cookbook. Take care to make sure you aren't making the balls too big, or they will flatten when you cook them. My note says "Makes up to 80 cookies." A Christmas favorite!
