1 tsp caraway seeds
2 bay leaves
4 cups chicken broth (or substitute with 2 cups beef broth)
1 cup water
Trim ends of brussels sprouts and cut in half lengthwise
Sausage (can be ground or in casings)
Potatoes peeled and cut into ½ inch pieces
onion (optional)

adjust all ingredients according to the quantity desired

Directions:
Cook sausage in olive oil in the pot that you will be adding other ingredients until browned over medium heat (about 7 mins). Remove casings and cut into ¼ inch thick slices or brown ground sausage but leave in larger chunks. When sausage is brown, add bay leaves and caraway seeds to the pot. Cook stirring until fragrant (about 1 min). Add potatoes, broth and 1 cup water. Bring to a boil. Add brussels sprouts. Partially cover pot and reduce heat to low to maintain a steady simmer. Cook soup until potatoes and brussels sprouts are tender (about 15 mins). Remove bay leaves and serve soup hot.
