1 tsp caraway seeds
2 bay leaves
4 cups chicken broth (or substitute with 2 cups beef broth)
1 cup water
Trim ends of brussels sprouts and cut in half lengthwise
Sausage (can be ground or in casings)
Potatoes peeled and cut into inch pieces
onion (optional)

adjust all ingredients according to the quantity desired

Directions:
Cook sausage in olive oil in the pot that you will be adding other ingredients until browned over medium heat (about 7 mins). Remove casings and cut into inch thick slices or brown ground sausage but leave in larger chunks. When sausage is brown, add bay leaves and caraway seeds to the pot. Cook stirring until fragrant (about 1 min). Add potatoes, broth and 1 cup water. Bring to a boil. Add brussels sprouts. Partially cover pot and reduce heat to low to maintain a steady simmer. Cook soup until potatoes and brussels sprouts are tender (about 15 mins). Remove bay leaves and serve soup hot.
