4 C flour
2 1/4 C whole milk
1 tsp salt
3 Tbsp active dry yeast
2 Tbsp warm milk
2 Tbsp finely grated lemon peel, orange peel and fresh ginger
1 C raisins
Vegetable oil for deep frying
2 C icing sugar

Directions:
Directions:
Sift the flour with the salt and add the milk.
Dissolve the yeast in the warm milk and let stand for 5 minutes.
Stir the yeast into the flour mix.
Place the dough in a warm place to rise, ~1 1/2 hours.

Punch the dough down and add the grated citrus peels, ginger and raisins.

Preheat the deep fryer to 190º C.
Dip 2 tablespoons in the hot oil and then into the batter to pull out a ball of dough.
Gently place the balls into the oil and fry until golden brown.

Move the balls to paper towels for a few minutes.
Arrange on a serving platter and either sprinkle with icing sugar or put the sugar in a bowl for dipping.

To make Appelflappen:
Omit the ginger and add cinnamon to the batter.
Dip sour apple rings into the batter and fry as for the Oliebollen.

Tips:
I will usually add more of the citrus as I really like the flavour but Omama omitted the citrus and ginger.
Adding sour apple chunks is easier than dipping apple rings into the batter.
Sometimes, Omama would make these the "easy" way and use a packaged version. They were good too!

I'm not sure I can remember a New Years without oliebollen! This is a family tradition that my mom held up. She would even make them and divvy them up to give to everyone if we weren't celebrating together!
