3/4 cup whole milk
3/4 cup all-purpose flour
3/4 tsp kosher salt
approx 1/4 cup of rendered beef or pork fat, olive oil, or butter
Note: in the past I've started with ingredients at room temperature.

- preheat oven to 400º
- in a medium bowl, whisk together eggs, milk, flour, and salt; do not over-mix.
- let stand for 30 minutes
- add a teaspoon of fat to each muffin tin
- transfer to oven to heat, 5-7 minutes
- divide batter equally to fill the 12 cups equally
- return to oven and bake 10-12 minutes until golden brown
- serve warm
