500g green beans, cut on the bias
2 TB br sugar
1 TB fish sauce
1 TB soy sauce
1 TB grated fresh ginger
1/2 tsp red pepper flakes
2 TB rice vinegar

Directions:
Directions:
Heat 2 TB oil quite hot in a frying pan. Add beans and cook without stirring until beginning to colour (~3 minutes). Add 1/4 c water and cover. Meanwhile, combine brown sugar, fish sauce and soy sauce in a small bowl.
After 2 minutes, uncover the beans and push them out to the edges of the pan. Add 1 TB oil in the centre, then add the ginger and red pepper flakes to the oil. Cook until fragrant (~30 seconds). Add sauce, stir in beans, and cook until beans are coated (~1 minute). Add vinegar and serve immediately.
