Grandma (Geri Evans)


7 whole Graham Crackers, crushed
2 tbsp. Sugar
1/4 tsp Cinnamon
4 tbsp Butter, melted

3 8 oz. Pkgs. Cream Cheese, softened
1 Cup Sugar
4 Eggs
2 tsp. Vanilla

1 Pint Sour Cream
6 tbsp. Powdered Sugar
1 tsp. Vanilla

Mix all ingredients for crust and press into 10" springform pan. Do not bake.

In large mixing bowl, beat eggs and sugar with electric hand mixer. Add softened cream cheese gradually. Add vanilla and beat until real smooth and creamy. Do not under beat.

Pour cheesecake mixture over crust and bake for 20 to 25 minutes at 350. It should not brown but you want it to set and not be too runny. Remove from oven and cool for 40 to 60 minutes.

Once cheesecake has cooled, mix all ingredients for topping with hand mixer until smooth. Pour over cake and bake for 5 minutes at 400.

Remove from oven, cool, cover and refrigerate.
