Ingredients: 1/4 lb bacon, sliced 2 leeks, sliced 2 celery stalks, sliced 2 large onions, coarsely chopped 1 C frozen peas 2 Tbsp peanut butter 3 tsp sambal oelek 2 Tbsp coconut oil Salt and pepper to taste Ketjap Manis to taste 2 C Basmati Rice 4 C Water

Directions:Rinse the rice and put it into a 4 qt pot with water. Cover with a lid and bring to a boil on high heat. Turn the heat down and simmer for 5 minutes. Remove from the heat and keep the lid on.
Fry the bacon in a wok or large fry pan until just crisp. Remove and drain in toweling. Add the leeks, celery and onions to the the coconut oil (can use bacon fat) in the wok and saute over medium heat until brown. Add the vegetables, peanut butter, sambal, salt/pepper and ketjap. Add the bacon pieces and simmer for 5 minutes.
Mix in the rice and heat through. Serve on a platter and top with fried or scrambled eggs, or omelet slices.
Tips: Any vegetable will work - try fresh green beans. The rice incorporates into the meat and vegetable mix better when it is cool. I like to make the rice the day before. |
