Zest of one organic lemon
2 bay leaves
1 teaspoon kosher salt
½ teaspoon black pepper
1 Tablespoon dried onion flakes
2 Tablespoons parsley
2 teaspoons Italian seasoning
1 Tablespoon sugar
½ teaspoon red pepper flakes
2 teaspoons minced garlic
⅓ cup tomato paste
¼ cup diced celery
2 cans diced tomatoes in juice (3 cups)
2 cups clam juice
½ cup burgundy cooking wine
2 Tablespoons lemon juice
2 Tablespoons red wine vinegar
2 Tablespoons olive oil
3-4 fillets of white fish i.e. cod, sea bass
2-3 cups seafood medley i.e. mussels, calamari, bay scallops, shrimp
