Chicken beasts or whole chicken cut into pieces
Flour
Salt
Pepper
Vegetable or Canola oil
Milk (for gravy)

Directions:
Directions:
- Skin chicken or leave skin on; chef's preference
- Heat oil in large skillet to medium
- Mix flour with salt and pepper
- Dredge each piece of chicken in the flour mixture; once oil is hot, place chicken in skillet
- Brown on each side; once brown, place pieces with meat side down; turn temp down allowing chicken to continue to cook.
- Once juices run clear, turn heat up to crisp up chicken
- Remove chicken from skillet and keep warm
- Remove most of oil, leaving approximately 1/2 - 3/4 cup in skillet
- Add flour to skillet to make a roux, soaking up all oil with flour
- Add milk and turn temp up to medium.
- Add salt and pepper to taste; stir continuously to thicken for gravy.
