9 lbs beets
2 cups sugar
2 cups vinegar
2 tsp pickling spice
Directions:
Directions:
cut off top of beets leaving 2 inch stem
cook in boiling water 30-40 minutes or till tender
rinse cool
remove skin and cut in pieces

combine remaining ingredients bring to boil for 2 minutes
pack beets in jars pour syrup over beets


hot water bath 30 minutes
