1 c unsalted butter, softened
1 c granulated sugar
3 egg yolks
3 c all-purpose flour
3 tbsp lemon juice
2 tbsp lemon zest
Directions:
Directions:
Preheat oven to 350 degrees F. Cream butter and sugar until fluffy. Add egg yolks, one at a time, mixing well after each addition. Add flour, lemon juice and zest, mix well. On lightly floured surface, roll dough to 1/4- inch thickness; cut with 1-1/2 inch round cookie cutter. Place on parchment-lined cookie sheets. Bake at 350 degrees for 10 to 12 minutes. Cool on wire cooling racks. Frost or.decorate as desired. Makes about 6 dozen.

For the frosting, I mix powdered sugar with enough lemon juice to make it just thin enough to dip the top of the cookie. Place on parchment paper for the frosting to dry.

And I use fresh lemon for the juice and zest
