3 c. cooked red potatoes, cooled and diced
½ c. finely chopped celery
¼ c. finely chopped parsley
4 slices lean bacon
½ c. chopped onion
⅔ c. water
1 tbsp. flour
¼ c. cider vinegar
2 tbsp. sugar
½ tsp. salt
¼ tsp. dry mustard
2 tsp. poppy seed

Directions:
In medium bowl, combine potatoes, celery and parsley. In a large non-stick skillet, cook diced bacon, removing the fat as it accumulates in the pan. Add onion and saute until onion is cooked but still has a bite. In small bowl, combine water, flour, vinegar, sugar and seasonings; stir into onion mixture. Continue cooking over medium heat until mixture thickens. Remove from heat. Pour sauce mixtures over potatoes. Toss gently to combine. Serve warm or at room temperature.
