4 c water
1 tsp salt

2 c cornmeal
2 c cold water

3 Tbs butter

Parmesan cheese

Directions:
Directions:
Put 4 c water and 1 tsp salt in pot and boil

Meanwhile put 2 c cornmeal and 2 c cold water in a bowl
Whisk so there are no lumps

Once water boils gradually add cornmeal mixed with cold water
Let simmer gently stirring frequently 20-30 min until it gets thick

Mix in 3 Tbs butter

Butter dish and pour in dish - salt and pepper
Top with Parmesan cheesecake if desired
Let sit until firm to cut

Usually make 1-2 batches
