2 c flour
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1 tsp cinnamon
1/4 c cocoa

3 eggs
1 1/2 c sugar
1/2 c oil

3/4 c buttermilk
1 c shredded zucchini, drained well in paper towel
1 tsp vanilla
1 c coarsely chopped walnuts
1/2 c raisins

icing sugar

Directions:

Preheat oven to 350º
Generously grease and flour bundt pan.

Sift dry ingredients together and set aside.
In large bowl beat eggs on high speed until light and fluffy. Gradually beat in sugar and then oil.

On low speed beat in dry ingredients alternately with buttermilk.
Fold in zucchini, vanilla, walnuts and raisins.
Pour into pan.

Bake 30 minutes.
Cool 10 minutes. Turn out on serving dish. Dust with icing sugar.
