1 pound lean ground beef
2 large carrots, julienned
1 medium onion, thinly sliced
2 medium zucchini, julienned
8 ounces mushrooms, sliced
1 bell pepper, thinly sliced
5 ounces baby spinach
2 cups hot cooked rice
4 eggs

Directions:
Directions:
Brown ground beef. Drain off any fat.
While the beef cooks, sauté the vegetables in a large skillet.
Divide the rice into 4 large bowls, top with 1/4 of the cooked ground beef and 1/4 of the vegetables.
Fry the eggs in a skillet and place one on top of each dish.
Serve with teriyaki, Yoshida's Gourmet or spicy sweet chili sauce.
