Grated potatoes
Grated Cheese

Directions:

Press the potatoes into a large preheated frying pan.
Cover and cook on medium heat until brown.
Flip the potato over and cook until done.
Sprinkle the cheese on top and add a lid.
Continue cooking until the cheese is melted and bubbly.

Tips:
If you make this on a baking sheet and cook it in the oven your potatoes will be soft. They have to be cooked on the stove top in a fry pan if you want them crunchy.
Russet type potatoes work the best.
Use the cheese of your choice.
Spice these up by adding some fresh parsley and ground hot peppers or Inca Fire Salt.
To make it a complete breakfast try adding a layer of salsa and scrambled eggs under the cheese.

Harry has made these for a number of years as I'm sure everyone knows! He learned to make them from Koit, who used to make them when Harry lived at home. The original recipe came from Harry's grandmother, Omi, who may have replicated it from a Granville Island market food stop. They are easy to make and worth the time - Delicious!!
